Zingiber officionale. Spicy, tuberous rhizomes Grow as an annual here. Dig before frost for tender ginger rhizomes without the fibrous skin. Cook with, pickle, or candy within a few weeks. Used to add spice to stews, soups, beverages, stir fry and seafood. Dig the rhizomes before frost. Best in a 12" or larger container or rich garden soil. Grows 2-4' tall and wide. Blooms seasonally. Filtered sun to part shade. Plant in fertile, moist, well-drained soil Zones 9-12.
